ORANGE TROUT WITH GARLIC AND HERBS

INGREDIENTS:

  • Zest of 1 orange
  • 1 tbsp. orange juice
  • 1 tbsp. Italian seasoning
  • 1 large clove garlic, minced
  • cayenne pepper
  • 1 tbsp. olive oil
  • salt and black pepper to taste
  • 1 lbs. trout fillets

INSTRUCTIONS:

  1. Preheat broiler. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.
  2. In a medium bowl combine orange zest, orange juice, Italian seasoning, garlic and cayenne pepper. Whisk in olive oil. Season with salt and pepper.
  3. Place fish skin-side-down on prepared baking sheet. Pat herb mixture onto fish.
  4. Broil about 7 minutes or until fish begins to flake. Allow to stand 5 minutes before serving.
