PASTA WITH OYSTERS AND TOMATOES

INGREDIENTS:

  • 1 can (796 mL) Compliments diced tomatoes
  • 125 mL (½ cup) white wine
  • 1 yellow bell pepper
  • 2 green onions
  • 15 mL (1 tbsp.) olive oil
  • 1 package Compliments linguine
  • 2 dozen fresh oysters, shucked
  • To taste, salt and pepper

INSTRUCTIONS:

  1. Cook pasta in a large pot of boiling water according to package directions.
  2. Heat olive oil in a large skillet on high. Add green onions and pepper. Sauté for 1 minute or until tender but crunchy.
  3. Add wine and reduce for 2 minutes.
  4. Add tomatoes oysters and reduce by half (about 10 to 12 minutes).
  5. Garnish with basil if desired and season to taste.
  6. Serve on a bed of linguine.
